The quote marks were to put the reader on notice not to expect a pile 
of lettuce with traditional decorations.  I couldn't tell you the 
ingredients any more, since my brain has stripped away all 
non-essential data from the experience except the name, a sense of 
surprise, a partly futile attempt to identify little thingies, and the 
final determination of edibility and "yum good"-ness.  I think the base 
may be shredded cabbage.
