Kurt, I don't know what the proper way is (maybe configure it for inetd or something) but what I did was move all the init.d scripts that I didn't want automatically started into a subdirectory of init.d called menu. Then I wrote a quick C++ program that prints a list of all the scripts in that directory and lets you start them by typing a number. I'm at work now and the program is on my home system, so I can email it to you tonight if you want it.
