Maybe the TERM variable is set to something that allows colour?  I'm not
an expert on terminfo stuff, but I believe that's the source of
your problem.  Mutt probably checks the value of the TERM variable, to see
if it can do colour, so if you choose a mono TERM value, you'll be fine.

linux-m, rxvt-m, xterm-mono, vt100, and ms-vt100 might work for ya.

Please let me know if this helps at all, or if it fails miserably.
