I used to use a very simple shell script executed by cron to download the latest virus scanner DAT file. I found the script in an old Red Hat 6 book. I don't have access to the script anymore, but I bet Google'ing will turn up plenty of options. (I believe the script I used was more simple than the one submitted by Eric.)
