What RAID level.

You can break RAID-1, and it'll keep working. It'll complain it's missing part of the array, but it will still work.

mdadm has a fail (mdadm -f /dev/md0 /dev/sdb1 or something) option that will allow you to fake a failed drive, then you can use mdadm to take it out of the array.
