Hi Neil,

I use the endian firewall as pretty much just a proxy server.  I would highly recommend it its easy to configure and pretty user friendly.  It has some built in reporting as well.  

Sarg is the reporting tool that I probably used the most the last time I built a proxy box.  Hopefully that helps and good luck.
