Thanks!
Alex clued me in that the proper term is "accelerator", so I did a
little poking around, and found that in Glade 3, at least, under the
"Common" tab for a menu item is a place to define an "accelerator" key
combination. In the ensuing dialog, I punched the Ctrl-P combination,
saved the Glade XML file, and relaunched my app. Worked like a charm.
