I've actually used handbrake, but thought it only worked to rip DVD formats, not things like mkv -> avi/divx.  I like it, and will give it a try.  Thanks.

Tried avidemux as well.  Problem is that I really don't understand the parameters, and most of the presets convert TO apple-friendly formats, whereas I need to transcode FROM those formats.
