The files directory should be chown'd recursively to the user that the apache httpd process runs as. Drupal runs flawlessly on CentOS 5, but consider adding the latest version of PHP from Remi. http://rpms.famillecollet.com/enterprise/5/remi/x86_64/repoview/php.html Don't be afraid to poke at the database, and try out drush.
