I personnally believe that the best course you can offer yourself is
this book:

And a few __hundred__ hours of practice at home, setting up every
possible service you find on the internet (dhcp, dns, mail, web, jabber,
ldap, nfs, ...).
Of course, command line only ;)
Not very useful, just the result of my personnal experience with
certifications and courses.
