How unstable?

I'm getting a little frustrated with Gentoo. I've been running the unstable branch, and it's - well - UNSTABLE! <wah wah wah!>

I'd like to try some other source-based distros (mostly because I'm just that geeky!) I've already tried Funtoo, which seems a little better than Gentoo, but still is essentially gentoo at its core.

Many years ago, I tried Linux From Scratch, but think that's more of a one-time build thing than a usable, updatable distro.

My other potential choices seem to be Lunar Linux, Sorcerer, and Source Mage. Has anybody tried any of these?

I also looked hard at Arch Linux, but although I like their philosophy, I really want to compile everything.

Anybody have any suggestions on which to try next?
