I've been using Arch on a daily basis for a year, it's worked well, highly recommended.

I would give openBSD a shot, it's very minimal out of the box and even though there is a package manager, you'll find yourself compiling most of the time.

Not sure, although it has GUI's available I've never used them on BSD.
 I used it as a server and it was nice.
