Remounting as rw might be all that is needed.  Just run mount with no
options to see how root is mounted already.

You should be able to boot from a CD and mount the filesystem and just
directly edit sudoers safely.  Are you using LVM?  If so, you might
need to first do a pvscan/lvscan/lvchange to get the devices to show
up.  If you're using raid you might need to do an mdadm -As as well
before that.
