Antergos and Manjaro both offer one, but they're heavily centered around running their installer. I've built a set of scripts (hell, a framework, really) that lets you build a custom Arch-based live environment, and supports a lot of extra things (uploading the ISO when finished, PXE/iPXE deployment integration, UEFI, i686/x86_64 on the same ISO, same iso for optical media or USB, etc. etc.)- the README has more information. And yes, it runs on intel Mac hardware (as long as it's 64-bit EFI, rather than that weird 32-bit EFI thing they were doing for a while- I haven't tested that yet). It allows for a heavy amount of modification, too- you can specify a custom set of packages, a custom file overlay right at build time too (I tried to get it to follow the "Arch Way"- leave the power of customization to your users). The documentation is a tiny bit behind (for instance, some new/changed file paths, and i need to mention that the custom package list and the prerequisites-for-runtime package list are separate now instead of combined), but you can grab it at https://bdisk.square-r00t.net/git/BDIsk (Make sure you read https://bdisk.square-r00t.net/git/BDisk/tree/docs/README) I'm currently working on cross-distro host platform support- I believe it currently only builds on Arch-based, Debian-based, and CentOS-based hosts. (That is, it builds an Arch-based ISO on any of those three distros/their direct derivatives).
