Yup, I am planning to have a systemrescuecd boot USB handy (which in
theory will support EFI - believe it or not I've yet to buy a
motherboard that supports it other than my chromebook, and I've yet to
get USB boot to work on that).

One word of warning.  The gentoo install CD suggested in the handbook
created by release engineering does not support EFI.  Everybody just
uses systemrescuecd as the gentoo install CD is really nothing more
than that (and in many ways it is less).  If the builds weren't
already scripted I suspect we'd just stop making it.

You can install Gentoo from any boot medium that gives you a shell and
internet, and access to basic tools like mkfs, f/gdisk/parted, etc.
Like arch you're basically just extracting a tarball and chrooting and
from there you're in Gentoo for the rest.
