They can say anything to make you believe that they won't store your stuff for future nefarious reasons. I know that google and apple both do this. I use protonmail, but I do not really trust them with confidential information. If I want to send a halfway secure message, I encrypt a message file using gpg and send the encrypted message as an attachment.
