In my bleeding edge Gentoo system, HPLIP was broken when I tried
the network scanning function. I haven't tried it lately, and
don't even remember what exactly didn't work the last time I tried
it. I remember thinking that HP would be "safe" since they are so
widespread. But living on the edge has its disadvantages. (It
also can be a lot more fun!)
Echoing Jeff here; we may be the odd men out but generally (especially lately) I've also had better luck with HP Laser MFP than Epson on Linux (obligatory "I use Arch, btw" here), as long as hplip is installed.

Weird problems now and then, but fixable. Earlier AIOs had crappy
hardware that broke.
I looked at an Epson that flat out wouldn't work (but that was only one
example).
