So, if you don't have privacy concerns, and AI quality is sufficient,
you might consider uploading them as unlisted videos onto YouTube and
using their automatic captioning service.  Getting the captions out is
a bit of a pain as it doesn't seem to be officially supported, but it
looks like tools exist for this.

Obviously you're giving Google a copy of your data, which I could see
as a concern in some cases.  You can make the video unlisted, so
nobody else will see it unless you give them a link, but obviously
Google will have it.

While it is going to be AI levels of quality, I'm guessing that they
do things to avoid giving offense with mistranscriptions since that
would create PR issues for them.  Of course being a typical Google
service it will be take it or leave it, and they'll of course keep a
copy in either case...  :)
