yourself on Linux or FreeBSD.

That smells like a neat little Terraform script.  Plug in a cloud/VPS provider and region, run Terraform to bring up a Wireguard VPN end-point, do whatever, and run Terraform destroy.  Depending on the cloud, the records for that may be subject to US subpoena of course, so utility here depends on the threat model.  Last time I looked Terraform supported EU and/or Swiss (other than Proton, of course) providers in addition to the big US ones.

I didn't dive in, but searching for "Terraform script for a VPN end-point" returned some likely looking starting points.
