You can get all mode on new radios as well. I suspect that in both used and new gear you'll probably pay significantly more for a radio that is all-mode than one that is FM-only. Of course a 30 year old used radio will be cheaper than a new one, but I'm talking apples-to-apples.

The better stuff just tends to stick around longer on the used market.  Same reason I'll pay $500 for a used out-of-warranty U.2 NVMe instead of buying the $2k+ equivalent in new hardware.

If there is some inexpensive VHF rig in production today that does SSB I'd be interested to hear.  Most are in the $1k+ range.

That would awesome since digital voice on VHF/UHF is an unholy mess-  D-star, DMR, C4FM (Fusion), NXDN (yep, some folks use that), P-25 (yep, some folks use that too)... I'm not buying that many radios.  FreeDV could be finally THE digital mode is available everywhere just like FM, SSB or even AM.  
No argument there, but I'm not sure we'll see it.  Half of those modes are already open enough that they could be implemented together on radios, but manufacturers are trying to create network effects to sell radios, or even trying to control the internet backbones for them.  I don't think the walled garden model really makes sense for ham radio...
