As the Bards serves them, it's an Irish appetizer style dish,
basically a small pile of mashed potatoes with some sort of filling
inside, and cooked in a pan. Mostly filling (chicken, veggies)
using the potatoes as a binder (instead of a pastry shell).
'boxty quesadilla' sounds rather different. Boxty covered in cheese?
