Depending on scope something like the nettherm the previous responder
suggested. If you have a big project take a look at home automation, even if
you don't use MrHouse their wiki has a lot of information on home automation
products. You would likely want to look at 1-wire systems (it's a bus system
that actually uses 2 pair phone wire, but one run can have many devices), or
low voltage (single pair) sensors.
