You can specify a different LaTeX document class, if you have one you like,
using #+LaTeX_CLASS and #+LaTeX_CLASS_OPTIONS.
If you just want quick-and-dirty, add something like the following line to
the top of your org file:
#+LaTeX_HEADER:\usepackage[margin=0.75in]{geometry}
This will make Donald Knuth cry.
