I can pitch in with my experience upgrading the Verizon ONT maybe a year ago. No problems with the same setup: beige box and ethernet straight to pfSense. Like JP I don't have cable or phone service though. I upgraded to take advantage of 100/100+ speeds. They required a technician to do the install (I asked) but he didn't flinch at the setup or try forcing me to use their gateway equipment. Things were fine.

Partially related, I ran into this project the other day on bypassing the ONT that might be interesting to folks. I kind of want to jack fiber straight into my pfSense box now. https://github.com/esmith443/Verizon-ONT-Bypass
I think I'll let them own the tip of the last mile, to reduce finger pointing if nothing else.
