So - is there any way then? Adobe Acrobat - the full product - will happily let you add "real" fillable form fields to a PDF file. Of course, that costs $$ and only runs on Windows and Mac OS. Another option would be to use something like pstoedit (http://www.pstoedit.net/pstoedit) to convert the PDF into another vector format that you could then type on top of...OR if you were really desperate, use ImageMagick to convert to a raster and then use the GIMP to add the data.
