I'm a LaTeXer. I tried DocBook, but it didn't do what I wanted easily. I like LaTeX b/c it works for minimal formatting and makes it look good in many formats. Changing defaults is really hard. I found the same troubles w/ DocBook. I just want to write fiction here. Anyway, I can help w/ latex. If I'm wrong about DocBook. please say so. I want to make courier 12 pt files doublespaced. That's all. I use the shortcuts so I don't have to write long things, in latex, and I use the feature where it compresses spaces so I don't have to fix errors like this. doxygen rules. It's almost like getting something for nothing. You can learn it in 10 min to generate reams of docs for your code. Please tell me what you chose and why.
