I am not sure if its running Linux, but I am using the XBMC, and its great.

I don't have my own Xbox but have modded a friend's.  If you have a
pre-1.6 xbox, it's very easy if you have the right game.  I did a soft
mod and could restore the original dashboard as well - fairly easy.
