Actually edubuntu is quite nice.  It seems to be nicely designed for 
server/thin client lab setups.  We are being less ambitious.  We took two old 
machines that were not in service and loaded it locally on them.  I used the 
lockdown editor and obscured everything but the education, games and graphics 
submenus.  I prevented terminal use.  Works OK.  Lots o' stuff available.
