VMWare Server installs on top of the OS, either Linux or Windows.
Player only lets you run pre-built VMs, although there are
work-arounds for that :)
Server lets you build and install your own VMs.  It differs from ESX
in that it requires a base OS whereas ESX installs on the bare
hardware.
