The point of vhosts is precisely that you do NOT need to waste number space for logically separated (in name space) we servers. I confess I can't think of a single good reason to use multiple IP addresses on the same host all for Apache. (The only legitimate reasons for multiple IP addresses on a single host I can think of are: a firewall/gateway/NAT/etc system routing between subnets; an application that needs to be multi-homed for redundancy; a VIP for clustering; a security application to perform passive scanning / honeypot / so forth.
