linux supports it.
You'll need a dual monitor card or two separate video cards.
Depending on your distro, it may have dual monitor support built-in. If
not, you have to edit "The X File" to make it work (xorg.conf, as I
remember it). What are you running?
I have run 3 on my machine with no ill effects. Many have run more.
