The asterisk mailing list archive will be an invaluable resource for 
you. I am currently setting up an Asterisk PBX for an office with the 
following hardware (server isn't solely for Asterisk use):

Cisco 7960G phones (5)
Digium AEX800 card (for FXO only)
Quad core XEON 2.5Ghz processor
8 GB ram
3ware 9650SE with 7, 500GB sataII drives

As you see I'm using an FXO card so I will be tapping into traditional 
POTS lines. I've heard mostly good things about Broadvoice as a sip 
upstream, but that is only hearsay.
