You said it well.  Other than a few well defined situations, I find that there is rarely a need for virtualization in a production environment.  Development & test environments are different (if I might crash a machine, I'd rather crash a virtual machine).  But for production, if any application requires separate virtual machines for isolation, I say choose a better application!
