Verizon tech support is telling me they can't enable both the coax and the Ethernet on the ONT... 

Jeez, this is ridiculous... 10 different answers from 10 different Vz people.. 

Any more ideas before I tell the installer to abort?

you over to Ethernet at another time.  The installer is lying or just
fell asleep during that portion of the training.  I had mine switched
just fine.  The router can grab internet connectivity from the
Ethernet port (assuming of course the router he is giving you has a
WAN Ethernet port).
