after installing vmware server, what resources have been consumed (storage, memory, etc)

You did say servers, so the answer is quite easy. Go with VMWare.
Check the specs of your base machine with ESXi and use that if possible,
but if not, don't hesitate to run VMWare server. I do that at home
myself. CentOS 5.4 64bit base with VMWare Server 2. It runs my servers
at home flawlessly and ESX / ESXi at work running several hundred
machines with nary a problem.
