The config settings on the printer menu don't look like dhcp is an option.
There isn't a modern static IP setup either. looks like maybe you set
each of the parts between the .s separately.

Correct

The choices are
         IP byte 1 =
 	...
         SM byte 1 =
 	...
         LG Byte 1 =
         ...
         GW byte 1 =
         ...

Would IP byte 1 = 192, byte 2 = 168, byte 3 = 1, byte 4 = 103
be the same as IP = 192.168.1.103

Yes

SM could be Subnet Mask,

Correct

LG...

I forget that one so it's probably not important.

GW = default gateway?

Yes

Why does a printer need a default gateway?

Unknown I think there was an option to allow emailing of a print file
using HP specific software, but I could be and probably am wrong on that
point.

You should be able to get a printer test page which will have much better
information on what all the bits are.
