The debian rescue system is the equivalent of a live cd, separate from the system drive.  I don't think permanent changes can be made to /boot on the rescue system.

[KSB] Then just edit the /boot/grub/grub.cfg file on the CentOS partition once the files are copied to disk.  Then, assuming that it is, say mounted from the live CD as /mnt/CentOS, just run grub-install --root-directory=/mnt/CentOS /dev/sda (or whatever the boot drive is).
