I have a customer that's using xtuple

Can't say I know that many details about how it works since I mostly do system
admin for them.  They're quite happy with it.

Sadly, the key parts are only "open" in the sense that when you're a paying
customer you get to see the source.  For most customers that's not a big deal
either way as they are not coders.
