A Pi can be vulnerable to power fluctuations from a flaky or failing power supply, so I'd also try a different power supply, and also try it without any of the external drives plugged in. The SD card could have worn out, so if you have a USB drive or other SD card or some way, you can try booting from another source. Maybe even try another network cable.

So, what can I do short of throwing up my hands and rebuilding it? I'd REALLY rather not do that, since the attached drives are configured as a RAID, and I'm honestly not sure how I'd be able to read that on a spanking new Raspbian NAS or PiNAS.

As Rich said, probably you're using mdadm (which should make recovery pretty easy) but if you have some details about what system you used to install or configure your RAID array, that could give some clues about your recovery options.
