Aaron,

How is Parallels in terms of memory usage? Also, have you had any problems with it? There seems to be a bug causing a kernel panic during heavy network traffic (http://forum.parallels.com/ thread89.html). have you run int to this issue? Looks promising though, and it will open up a lot of options. This might be what pushes me over the edge to actually go out and get an Intel Mac.

Oh, and I now use Parallels (www.parallels.org) for VM so I can run legacy operating systems and browsers (like xp and ie6 / ie7 public beta.) It is in beta now, but pretty cool nonetheless. FAST xp install from disk image.
