Not sure if this is relevant to Linux kernel configs, but BSD kernels have a BUFPAGES setting which needs to be cranked up in order to get at large amounts of RAM. (Of course, the symptom there is a kernel panic when it tries to allocate pages beyond what its made room for in its tables.)
