someone's working on a mod_mp3 for apache also, but its variable bitrate
stuff needs a little polish.

Lincoln Stein wrote a module call Apache::MP3 which works pretty nice for streaming mp3 files over HTTP (requires mod_perl).

But as far as other audio streamers on Linux:

Icecast (as Mental mentioned) is very nice - http://www.icecast.org
Shoutcast (binary only) - http://www.shoutcast.com
Fluid (open source Java) - http://fluid.sourceforge.net
Darwin - http://www.apple.com/quicktime/preview/qtss.html
Real - http://www.realnetworks.com (I know real has a Linux port of their streaming server. You can download the basic server for free which will give you some limited number of concurrent licenses).

Also, I know that Lucent/Bell Labs has a free open source streaming server that works on Linux and handles RTSP streams (sorry no URI for that one handy).

If your looking into selling your music on-line securely, check out http://www.liquidaudio.com. I don't know too much about this (if there is even a Linux port of the server) but I know it is designed from the ground up to handle selling music securely on-line. There are a few caveats, one major one being that it uses (or at least used to) a proprietary audio codec which requires the "Liquid Player" to listen to the audio. It is also expensive (I think).
