Are you running the 2.2 kernel? (Does 7.3 still offer a 2.2 kernel?) I've had similar problems with NFS between Linux boxes, but haven't tried it in several months. Last time I had the problem I ended up killing or HUP'ing two of the nfs deamons after my umounts so I could remove the CD and remount the next one.
