Apache should be drop dead simple. Its all in the logs, or it can be 
easily.

Sendmail does log the data if you set the log level to like 9 or so. You 
just need to match up the msgid's. There's 2 lines logged per message. 
One line for when you recieved it, where, etc and one for who it wound 
up being delivered to, when, etc. The size of the message is reported 
both times. Check out anteater, it probably does what you want, or its 
close enough that it'll get you started.
