Maturity is important. If you're running a stable, patched OS and Web server, why rush to install newer versions? With newer versions come new problems. Over time those problems will be patched, making the newer OS and Web server more reliable and secure. So, for production use, stay behind the "bleeding-edge" releases. Test, patch, test, then use.
