Under Linux:

  ifconfig eth0 hw ether 00:33:66:99:CC:FF

or whatever your NIC card and desired MAC address may be.  It's not clear
what this buys you above and beyond assigning a static IP address.  You'll
have to either manage static IPs on the hard drives, or manage MAC
address assignments on the hard drives along with DHCP assignments on the
server.  I suppose you could just up the lease period if you want
relatively stable assignments and don't get a lot of transient machines.

Even if you assign static IPs you won't need to turn off DHCP at the
router,
just to be clear.  Make sure any addresses you assign are outside the DHCP
range.  For a Linksys router, I believe you'll be safe if you stick to
addresses >=192.168.1.5 and <=192.168.1.99.
