There are essentially two things an MTA can do with a message that isn't going to be locally delivered: It can either lookup the MX hosts for the destination address and contact those hosts directly, or it can send the messages to another SMTP server -- a smarthost -- which will do the work of looking up the MX hosts, and periodically retry contacting MX hosts that initially timeout. A smarthost is really just an SMTP server that allows your MTA to relay though it, and is typically run by your ISP.
