extemporaneously:

* ZFS (including RAID-Z self-healing!)
* DTrace (aka "Xray")
* CoreImage (beginning of the "zooming user interface")
* built-in Remote Desktop without having to buy ARD (or install a VNC client)
* Time Machine (automated versioned backups for non-nerds)
* alot of clean-up / refactoring to the GUI so that it doesn't have
that Windows crufty feel of "where to I configure this option?"
