I'll "second" Munin. We rolled it out to all our Linux servers about two months ago. It is awesome to see not only current load/statistics, but also to be able to easily see graphs that demonstrate trends over time. Looking forward to using this for capacity planning, etc.

I adore Munin. It's great for helping me keep track of how loaded my
servers are.
I also like rsync for its general utility, and duplicity, which is
like rsync but with the ability to do incremental/differential
backups.
I know that Munin and Duplicity can be installed via apt-get on Ubuntu
8.04. Not sure about other distros.
