Why not Debian Stable, it has a longer support cycle than ubuntu, and in my experience Debian upgrades, when they are needed, are relatively painless.  Also, it doesn't include the Unity crap that has been discussed so much.

Rolling back to an LVM snapshot is not implemented yet.
